Kaylah, aka The Dainty Squid sent me this *delicious* looking recipe for homemade vegan snickerdoodles to share with everyboday. ''It's a super simple, yet really yummy recipe that is perfect with a glass of milk (or soy milk!)'', she says. I'm tempted to hop off my computer and make em! Get your apron on...
For the cookies-
1 1/2 cups sugar
1/2 cup vegan butter
2 teaspoons cinnamon
1/2 cup shortening
2 eggs worth of egg replacer
2 3/4 cups self rising flour
For coating-
1/4 cup sugar
4 teaspoons
cinnamon
Heat oven to 400ºF. Mix 1 1/2 cups sugar, the butter, shortening, 2t cinnamon and "eggs" in large bowl. Stir in the self rising flour thoroughly.
Shape dough into small balls (approximately 1 inch). Mix the other 1/4 cup sugar and the cinnamon together. Roll balls in cinnamon sugar mixture. Place on an ungreased cookie sheet and Bake 8 to 10 minutes. Remove from cookie sheet to wire rack, cool and enjoy!
