I live in Melbourne, Australia and because we're all the way down under in the southern hemisphere, christmas time for us means summer time, and all that entails: sunshine (lollipops) and a distinct lack of snow! But us Aussies are an ingenious people and geographical impediments will not stop us from enjoying a 'white christmas.' Though in our case 'white christmas' is a deliciously sweet slice of confectionary!
Sadly, white christmas slice has come to have a bit of a stigma attached to it. It's a very kitschy 60s recipe and is traditionally made from pantry staples like rice bubbles, vegetable shortening and glacé cherries - not the fanciest ingredients, i'm sure you'll agree. But its one of those things that I have fond memories of: elderly neighbors would make it, batches would be given as teacher's presents, and it was an easy thing to make as a kid.
So I want to share with you an updated take on this kitschy classic. No vegetable shortening here! Ingredients include white chocolate, dried cranberries, ginger - but the old skool glacé cherries and rice bubbles stayed because glacé cherries and rice bubbles are just not used together enough these days!
I've created a recipe card to print and keep - maybe even those of you enjoying real white christmases can enjoy this easy festive treat. But just know that I'll be jealous of your double-white christmas while I'm here sweatin' it over a roast turkey dinner in the middle of summer!
